Findings indicated that the Nipa syrup reduced DPPH radical. DPPH radical scavenging activity of the syrup was 42.19%. Since phenolics are present are known for having an antioxidant property, their presence in Nipa syrup explains its antioxidant activity. Total phenolics content of Nipa syrup is 29.71mg/ 100ml. Gallic Acid Equivalent.


Conclusions
Based from the results, Nipa s...yrup contains 24.77% moisture content, 5.86% ash, 0.41% fat, 2.1% protein and 67.04% carbohydrates. Nipa syrup obtained a pH value of 4.6, titratable acidity of 1.30%, water activity of 0.614 and a viscosity of 27.136 Pa’s . Nipa syrup also has 90* Brix, 21.45% total sugars, and 19.35% reducing sugars.

Nipa syrup was found to be most active against E. coli and C. albicans
Nipa syrup demonstrated 42.19% radical scavenging activity, based on the results of the DPPH assay. Antimicrobial and antioxidant activities could be attributed to the presence of phenolics. Total phenolics content of nipa syrup is 29.7099 mg/ 100 ml GAE.
